Recipe for Tinned Albacore Tuna Spicy Oil Lettuce Wraps

We liked this recipe because we found it a perfect way for a fresh, vegetable type of lunch anywhere, especially because you can simply pop open a can of tuna!


Ingredients:

2 tins of Fishwife Albacore Tuna in Spicy Oil, drained of oil (perhaps save a little as a topping if desired)

1/2 cup red bell peppers, chopped into cubes

1/2 cup cucumbers, cubed

1/2 cup avocado, halved, browned face, into cubes

1/2 cup sweet cherry tomatoes

1/3 cup fresh cilantro , minced Handful of fresh chives, cut to 2m segments

Butter lettuce for wraps, cleaned and dried

fresh lime quarters, for serving


Directions:

Prep all ingredients in advance, take all of your preparation and they can be sieved / dried and put to container for when you are ready.


When ready, simply drain the majority of the tuna, but save some of the liquid if you'd like it for flavoring on the wrap. Assemble you wrap by putting the tuna on the lettuce first, then aromatics, then avocado, then top with the bell peppers, cucumbers and cherry tomatoes. Garnish one time for the visual.


We like a quick hit of fresh lime to brighten up the entire affair - and or we like to top with Asian Cajun Cowby's Cajun Nu'oc Cham sauce!
